What does impact look like in sensory science?
For us, impact means generating insights that are closer to real consumer behaviour and more useful for decision-making. Through immersive environments, eye-tracking and advanced digital sensory methodologies, we are exploring new ways to understand how context, attention and information influence perception and behaviour. These approaches allow us to move beyond traditional surveys and closer to the way people actually interact with products in everyday life.
Technology, however, is not the destination. It is a tool that enables richer, more actionable consumer insights and helps transform research into better innovation decisions.

From Sustainable Innovation to Real-World Adoption
Sustainability remains one of the greatest challenges facing the food industry. Yet innovative products only create meaningful impact when consumers are willing to incorporate them into their everyday lives.
Several of the studies we are presenting explore this challenge through alternative proteins, novel ingredients and more sustainable food solutions. Together, they address a critical question:
What transforms a promising innovation into a product that people genuinely choose?
The answer often lies beyond technical performance. Consumer behaviour changes with context, and what people say in a laboratory is not always what they do at home, during a meal or after repeated consumption. That is why we continue to invest in methodologies that bring research closer to real-life situations, including in-home studies, contextual evaluations and repeated-exposure approaches.
By understanding how products fit into daily routines and how perceptions evolve over time, we generate evidence that better reflects real consumption behaviour. For companies, this means more reliable insights, more confident product development decisions and a greater likelihood of successful market adoption.
Ultimately, if sustainability is to move from concept to widespread adoption, innovation must be designed not only for performance, but also for people.
